Cocktail Base

    Combine and shake

    Add gin, freshly squeezed lemon juice, simple syrup, and Green Chartreuse into a cocktail shaker. Fill the shaker with ice (about 3 large cubes). Secure the lid and shake vigorously for 12–15 seconds until the shaker is well-chilled and frosty outside.

Herbal-Bitter Finish

    Prepare glass

    Pour the absinthe into the chilled old-fashioned glass and gently swirl to coat the inside (an absinthe rinse). Discard any excess absinthe by pouring it out, leaving a light herbal aroma.

    Add 2 dashes of Angostura bitters to the shaker after or right before shaking (if you want the bitters integrated into the base), or add them to the finished drink for a more aromatic top note. Both methods work; this recipe adds them to the shaker.

Finish & Garnish

    Strain and serve

    Using a Hawthorne strainer, strain the shaken cocktail from the shaker into the absinthe-rinsed old-fashioned glass over one large clear ice cube (or the 3 large cubes if preferred).

    Express and garnish

    Hold a lemon peel over the drink and give it a firm twist to release the oils across the surface, then rub the peel around the glass rim and drop it into the drink. Gently slap the thyme sprig between your palms to release its aroma and place it on top as a garnish.
