Equipment & sanitation

Method

Milk

  1. 1

    Serve fresh cold milk

Stir or gently swirl 4 cups of fresh whole milk in its container to distribute any cream that may have separated. Pour into a clean, chilled glass or pitcher. If desired, add up to 1 teaspoon salt per 4 cups to enhance flavor and stir until dissolved. Serve immediately chilled.

  2. 2

    Adjust richness (optional)

If you prefer richer milk, gently fold 1/4 cup heavy cream into the 4 cups of whole milk until uniform. Chill briefly to allow integration, then serve.

  3. 3

    Warm milk (optional)

Pour the 4 cups of milk into a small saucepan. Heat over low to medium-low heat, stirring frequently to prevent a skin or scorching. Using an instant-read thermometer, warm to 120–130°F (49–54°C) for gently warmed drinking milk, or to 160°F (71°C) if pasteurizing at home for safety (hold at 160°F for 15 seconds). Do not boil. Remove from heat, cool slightly, then pour into a clean pitcher and serve warm or cool in the refrigerator.

Equipment & sanitation

  1. 4

Always use clean, food-safe equipment (pitcher, bottle, or saucepan) and clean hands when handling milk. If storing, transfer milk to a sealed container and refrigerate at or below 40°F (4°C) and consume within 3–5 days for best quality. Discard if it develops off-odors, sour taste, or curdling.
