Prepare eggs
Crack the eggs into a small bowl. Add the milk, salt, and black pepper. Whisk thoroughly until the mixture is uniformly pale and slightly frothy, about 20–30 seconds.

Toast bread
Lightly toast the two slices of bread to your preference in a toaster or in a dry skillet over medium heat for about 1–2 minutes per side. Set toasted bread aside on a plate.

Cook eggs
Heat a nonstick skillet over medium heat and add the butter. When the butter foams and begins to sizzle gently, pour in the egg mixture. Allow the edges to set for about 10–15 seconds, then using a heatproof spatula, gently stir or fold the eggs, pushing from the edges to the center to create soft curds. Cook until eggs are mostly set but still slightly glossy — about 1–2 minutes total — then remove from heat (they will continue to cook slightly).

Warm ham and melt cheese
In the same skillet (wipe excess butter if desired) or in a separate small skillet over medium-low heat, place the ham slices and warm for about 20–30 seconds per side until heated through and slightly browned at the edges. Place one slice of cheese on top of the warm ham in the pan for 20–30 seconds until it begins to soften and melt slightly.

Assemble sandwich
If using mayonnaise, spread it on one or both slices of toasted bread. Place the warmed ham with melted cheese on one slice of toast, then spoon the scrambled eggs on top of the cheese. Top with the second slice of toast, cut in half if desired, and serve immediately.
