If using a method that yields a milder cup, add 1 tsp instant coffee granules to the brewed liquid to increase body and crema potential.

    Keep the brewed coffee very hot (just off boil) while you prepare the crema mixture so the sugar dissolves and the emulsion forms more easily.

    Make sugar syrup

    Combine 2 tablespoons granulated sugar with 1 tablespoon cold water in a small heatproof bowl. Stir briefly to moisten, then whisk or shake vigorously until the sugar dissolves slightly and the mixture becomes a bit syrupy (about 30–45 seconds). This helps the sugar more readily incorporate into the coffee and aids crema formation.

    Emulsify to form crema

    Pour the hot brewed coffee in a steady stream into the sugar mixture. Using a small whisk, handheld milk frother, or electric frother, vigorously whisk the coffee + sugar mixture for 45–90 seconds until it becomes pale, slightly thickened and foamy on top — this is the crema. If using a blender: blend on high for 20–30 seconds. If using a jar: close tightly and shake vigorously for 60–90 seconds. The goal is a stable, glossy foam about 1–2 cm thick.

    Prepare your serving base: pour 120 ml of cold milk into a glass for an iced-style crema di caffè, or 120 ml of hot espresso/strong coffee into a cup for a hot layered drink.

    Spoon or pour the prepared crema gently over the surface of the milk or hot coffee. The thick crema should float as a distinct layer on top. If desired, dust lightly with 1/4 tsp cocoa powder or grated chocolate for garnish.
