Grind beans
Measure 0.0625 cups (about 10–12 g) of fresh whole coffee beans. Grind to a medium-coarse grind if using a pour-over or French press; grind finer (medium) if using a drip coffee maker. Aim for a consistent grind size for even extraction.

Heat water
Heat 1 cup (240 ml) of filtered water to 195–205°F (90–96°C). If you don't have a thermometer, bring water to a boil then let it sit 30 seconds.

Brew
Place the ground coffee into your chosen brewer (paper filter in pour-over or drip, or directly in French press). Slowly pour hot water over grounds to evenly saturate (if pour-over) or pour all water over grounds (if French press/drip). Use a 1:16 coffee-to-water ratio by weight; the ingredient quantities given approximate that ratio for one 8-oz cup. Let brew: pour-over/drip will finish automatically; French press: steep 4 minutes then press plunger down slowly.

Clean up
Discard used grounds and rinse your brewer. If using a French press, remove grounds promptly to avoid bitterness. Rinse grinder and store beans in an airtight container.
