    Applewood bacon

    Heat a large nonstick or cast-iron skillet over medium heat. Lay 3 slices of applewood smoked bacon in a single layer. Cook 3–4 minutes per side, turning occasionally, until browned and crisp to your preference. Transfer to a paper towel–lined plate to drain. Reserve 1 tablespoon drippings in the pan for the home fries (skip if using ham).

    Virginia baked ham

    If using ham, heat a skillet over medium heat and add 1 teaspoon butter or a light spray of oil. Add 3 oz sliced Virginia baked ham and warm 1–2 minutes per side until lightly caramelized at the edges. Remove and keep warm. Reserve any pan fond to add to home fries.

    Eggs — any style (fried/scrambled/poached)

    Fried: Heat 1 tsp butter in a small nonstick skillet over medium-low. Crack 2 eggs into the pan, season with 1/4 tsp salt and a pinch of pepper. Cook 2–3 minutes for set whites and runny yolks, or cover 1 minute more for over-easy/medium. Scrambled: Beat eggs lightly with a fork, season, melt 1 tsp butter in skillet over medium-low; add eggs and gently stir until soft curds form, about 2–3 minutes. Poached: Bring a 2–3 inch-deep pot of water to a simmer with 1 tsp vinegar, swirl, lower cracked egg into center and cook 3 minutes for a soft poach; remove with slotted spoon onto paper towel. Keep eggs warm while finishing home fries.

Home fries

    If you haven’t already, peel (optional) and dice russet potato into 1/2-inch cubes. Place diced potatoes in a bowl of cold water and let sit 5 minutes to remove excess starch; drain and pat dry thoroughly with a clean towel or paper towels.

    Heat a large skillet (preferably cast iron) over medium-high heat. Add 2 tbs vegetable oil and 1 tbs unsalted butter. Once butter is melted and shimmering, add the diced potatoes in a single layer (work in batches if needed). Let cook undisturbed for 3–4 minutes to develop a brown crust.

    Add the diced onion and diced green pepper (if using) to the skillet with the potatoes. Stir to combine and continue to cook, stirring every 2–3 minutes, until potatoes are browned and tender, about 10–12 more minutes total. If you reserved bacon drippings or ham pan fond, add it now for extra flavor.

    Season the potatoes with 1/2 tsp kosher salt, 1/4 tsp black pepper, 1/2 tsp smoked paprika and 1/4 tsp garlic powder. Stir well and cook 1–2 additional minutes to let spices bloom.

    Taste and adjust seasoning. Sprinkle chopped fresh parsley over the home fries, then transfer to a warm plate and keep warm while you finish the eggs and plate the proteins.

Finishing & plating

    Arrange a generous portion of home fries on each plate (recipe quantities yield approximately one serving shown). Add the chosen protein: three slices of crisp applewood bacon or 3 oz warmed Virginia baked ham to the side of the potatoes.

    Top with eggs prepared to your preferred style. Sprinkle a little extra parsley or black pepper over the eggs and home fries. Serve immediately.
