Prepare the Filling
In a mixing bowl, combine ricotta cheese, grated Parmesan cheese, chopped fresh basil, salt, and black pepper. Mix well until all ingredients are thoroughly combined. Set aside.

Make the Pasta Dough
On a clean surface or in a large bowl, combine all-purpose flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough for about 5-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Roll out the Dough and Fill
Divide the rested dough into four portions. Roll out each portion into thin sheets using a pasta machine or a rolling pin. Lay one sheet on a floured surface and place small spoonfuls of filling (about 1 teaspoon each) about 1 inch apart. Cover with another sheet of dough and press down around the filling to seal. Cut into squares or use a ravioli cutter. Repeat with remaining dough and filling.

Prepare the Coating
In a bowl, whisk together 1 egg and water. Dip each ravioli into the egg wash, then coat with breadcrumbs mixed with grated Parmesan cheese.

Fry the Ravioli
In a deep frying pan, heat the oil over medium heat. Once hot, carefully add the coated ravioli in batches, frying until golden brown, about 2-3 minutes per side. Use a slotted spoon to transfer the fried ravioli to a plate lined with paper towels to drain excess oil.
