Pasta Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Add the olive oil.

    Knead the Dough

    Using a fork, beat the eggs and gradually incorporate the flour until a shaggy dough forms. Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    Rest the Dough

    Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

    Roll Out the Pasta

    After resting, divide the dough into four pieces. Roll each piece into thin sheets using a pasta machine or a rolling pin. Cut into desired shapes (fettuccine, tagliatelle, etc.).

Sauce Preparation

    Cook the Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add the Tomatoes

    Add the halved cherry tomatoes to the skillet. Season with salt and black pepper. Cook for about 5-7 minutes until the tomatoes are softened and start to burst.

    Combine Basil and Cheese

    Stir in the chopped fresh basil and grated Parmesan cheese into the sauce. Mix well to combine flavors and remove from heat.

Combine and Serve

    Cook the Pasta

    In a large pot of boiling salted water, cook the prepared pasta for 2-4 minutes until al dente. Fresh pasta cooks much quicker than dried pasta.

    Combine Pasta and Sauce

    Drain the pasta and immediately add it to the skillet with the sauce. Toss to combine, ensuring the pasta is well coated with the sauce.

    Serve

    Divide the pasta into serving plates and garnish with additional Parmesan cheese and basil if desired. Serve immediately.
