Sugo (Sauce)
Method
Prepare Meatballs
- 1
Mix Ingredients
In a large mixing bowl, combine ground beef, ground pork, bread crumbs, Parmesan cheese, parsley, minced garlic, eggs, salt, and black pepper. Mix until well combined.
- 2
Form Meatballs
Using your hands, form the mixture into 12 equal-sized meatballs, about 2 inches in diameter.
- 3
Chill Meatballs
Place the meatballs on a baking sheet and refrigerate for at least 30 minutes to firm up.
Prepare Sugo
- 4
Sauté Onion and Garlic
In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
- 5
Add Tomatoes and Seasonings
Pour in the crushed tomatoes, and stir in the chopped basil, dried oregano, salt, black pepper, and sugar. Bring to a simmer.
- 6
Add Meatballs
Once the sauce is simmering, gently place the chilled meatballs into the sauce. Cover and let simmer for 30 minutes, turning the meatballs halfway through cooking.
