Chicken

Amogio Lemon-Garlic Marinade

Capers and Garnish

Method

Marinade Preparation

  1. 1

    Prepare the Amogio Lemon-Garlic Marinade

In a bowl, combine lemon juice, minced garlic, chopped parsley, red pepper flakes, and olive oil. Whisk together until well combined.

Chicken Preparation

  1. 2

    Marinate the Chicken

Place the chicken breasts in a shallow dish and pour the marinade over them. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

  2. 3

    Prepare the Chicken for Cooking

Remove the chicken from the marinade and pat dry with paper towels. Season both sides with salt and black pepper. Dredge each chicken breast in flour, shaking off the excess.

Cooking

  1. 4

    Cook the Chicken

In a large skillet, heat olive oil and butter over medium-high heat. Once hot, add the floured chicken breasts and cook for about 5-7 minutes per side, or until golden brown and cooked through. Transfer the chicken to a platter and keep warm.

  2. 5

    Make the Sauce

In the same skillet, add the capers and the remaining marinade. Cook for 2-3 minutes, scraping up any browned bits from the pan. Bring it to a simmer.

  3. 6

    Combine and Serve

Return the chicken to the skillet and spoon the sauce over the top. Garnish with lemon slices and additional parsley if desired. Serve warm.
