Dough Preparation

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Whisk together until well combined.

    Incorporate Butter

    Add the unsalted butter to the flour mixture. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.

    Add Wet Ingredients

    In a separate small bowl, beat the egg, then add the white wine (or vinegar) and water. Mix well and then add to the flour mixture.

    Knead the Dough

    Stir until the dough begins to come together, then knead on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 1 hour.

Filling Preparation

    In a medium bowl, combine the ricotta cheese, powdered sugar, vanilla extract, chocolate chips, and cinnamon. Mix until smooth and well combined.

    Chill the Filling

    Cover the filling and refrigerate until ready to use, at least 30 minutes.

Frying

    Roll Out Dough

    On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into rectangles about 3x5 inches.

    Shape the Cannoli

    Wrap each rectangle around a cannoli tube, sealing the edges with a bit of water.

    Heat Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry Cannoli

    Carefully place the cannoli in the hot oil, frying in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Assembly

    Once the cannoli shells are cool, carefully remove them from the tubes and fill with the ricotta filling using a pastry bag.
