    Prepare bread

    If using a baguette or ciabatta, slice the loaf into two sandwich-length pieces and then halve. If using sandwich slices, lay two slices flat. Spread butter lightly on the outer faces of the bread if you plan to toast.

    Layer salami and cheese

    Arrange 6 slices of salami on the bottom piece of bread overlapping slightly to cover the surface. Place the 2 slices of provolone over the salami.

    Add vegetables

    Top cheese with tomato slices, then red onion rings, then lettuce leaves. Season the tomato and onion lightly with a pinch of salt and a grind of black pepper (use part of the specified salt and pepper).

    Top and press

    Place the top piece of bread over the layered ingredients. If desired, press down gently to compact the sandwich before toasting or serving.

    Make the dressing

    In a small bowl or jar combine 1 tablespoon olive oil, 1 teaspoon red wine vinegar, 1/2 teaspoon Dijon mustard, 1 teaspoon capers (if using), 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Whisk or shake until emulsified.

    Dress the sandwich

    Drizzle half of the dressing over the tomato/onion/lettuce layer. Reserve the rest to serve on the side or for another sandwich.

    Optional toast

    If you prefer a warm toasted sandwich: heat a skillet over medium heat. Lightly butter the outside faces of the sandwich (about 1 tablespoon total). Place sandwich in the skillet and toast 3–4 minutes per side, pressing with a spatula, until bread is golden and cheese has softened.

    Slice and serve

    Remove sandwich from skillet (if toasted) and let rest 1 minute. Slice in half and serve immediately with any reserved dressing on the side.
