Acai Base
Toppings
Method
Acai Base
- 1
Prepare frozen fruit
Measure the frozen acai puree packets (about 200 g), and break into smaller chunks if frozen solid so they blend more easily. Have the frozen banana and frozen strawberries measured and ready.
- 2
Blend base
In a high-speed blender, add the frozen acai, frozen banana, frozen strawberries, 1 cup (120 ml) blueberries, 120 ml yogurt, and 120 ml cold water or almond milk. Add 1 tablespoon honey or agave if you prefer a sweeter bowl.
- 3
Pulse to combine
Start blending on low, using short pulses to break up the frozen fruit. Gradually increase speed and blend until mixture is thick, smooth, and scoopable (like soft-serve). If it becomes too thick to move, add water/almond milk 1 tablespoon at a time. If too thin, add a few ice cubes or a small piece of frozen banana and re-blend.
- 4
Adjust consistency and taste
Taste and adjust sweetness with more honey/agave if needed. The final texture should hold a spoon-shaped peak so toppings rest on top rather than sink.
Toppings & Assembly
- 5
Prepare toppings
Slice 1/2 cup banana and 1/2 cup strawberries if not already sliced. Measure out granola, coconut chips, extra yogurt, and optional chia seeds or bee pollen.
- 6
Spoon acai into bowls
Divide the blended acai base evenly between two serving bowls (or a single large bowl) using a spatula to scrape down the blender sides so you get all of the thick mixture.
- 7
Arrange toppings
Neatly arrange the sliced banana, sliced strawberries, and remaining fresh blueberries on top of each bowl. Sprinkle 1/4 cup granola per bowl (or 1/2 cup for one bowl), scatter 1 tablespoon coconut chips, and add a 1–2 tablespoon dollop of extra yogurt in the center of each bowl. Finish with a sprinkle of chia seeds or bee pollen if using.
- 8
Serve
Serve immediately with a spoon so the granola stays crunchy. If not eating right away, cover and refrigerate for up to 2 hours; granola will soften over time.
