Prepare prawns
Rinse the prawns under cold water and pat dry thoroughly with paper towels. If shells are on, remove shells leaving tails if preferred; devein if not already done. Drying is important so the marinade adheres and they sear rather than steam.

Make marinade
In a medium bowl combine 3 tbs olive oil, 2 tbs fresh lemon juice, 3 minced garlic cloves, 1 tsp smoked paprika, 1 tsp ground cumin, 1 tsp red pepper flakes, 1 tsp honey, 2 tbs chopped parsley, 1.25 tsp salt, and 0.5 tsp freshly ground black pepper. Whisk until combined.

Marinate prawns
Add the dried prawns to the marinade and toss to coat evenly. Cover and refrigerate for 15–30 minutes. Do not marinate more than 60 minutes — the acid will begin to ‘cook’ the prawns and make them tough.

Skewer (optional)
If using wooden skewers, soak them in water for 20–30 minutes before assembling. Thread prawns onto skewers through the thick part so they lie flat and are easy to turn (3 prawns per skewer for even cooking).

Grill prawns
Place prawns directly on the hot grill or in the grill pan in a single layer. Grill 2–3 minutes on the first side without moving, until edges turn pink and grill marks form. Flip and grill another 1–2 minutes until opaque and just cooked through. Total cook time is about 4–5 minutes depending on prawn size. Avoid overcooking.
