Chicken Filling Preparation

    Cook the Chicken

    In a large skillet over medium-high heat, add the vegetable oil. Once hot, add the minced garlic and ginger, sauté until fragrant (about 30 seconds). Then add the chicken thighs, cook until browned and cooked through (about 7-10 minutes).

    Season the Chicken

    Once the chicken is cooked, remove from heat. In a small bowl, mix the soy sauce, cornstarch, and Szechuan peppercorns. Pour this mixture over the cooked chicken and stir well to coat. Return to low heat for 2-3 minutes until the sauce thickens.

    Finish with Green Onions

    Stir in the chopped green onions and remove from heat. Set aside.

Sweet Soy Ginger Glaze Preparation

    Combine Ingredients

    In a small saucepan, combine soy sauce, brown sugar, grated ginger, minced garlic, and sesame oil. Stir well.

    Bring the mixture to a gentle boil over medium heat. Reduce heat and let simmer for 5-7 minutes until slightly thickened. Remove from heat and set aside.

Spicy Aioli Preparation

    In a bowl, combine mayonnaise, Sriracha, and lime juice. Whisk until smooth and well combined. Adjust seasoning if necessary.

Assembly

    Take a butter lettuce leaf and spoon a generous amount of the chicken filling into the center.
