Making the Pastry Dough

    Prepare the Dough

    In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Form the Dough

    Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preparing the Apple Filling

    Core and Slice the Apples

    Peel, core, and slice the Granny Smith apples into thin wedges.

    Mix the Filling

    In a large bowl, combine the sliced apples, brown sugar, ground cinnamon, ground nutmeg, lemon juice, toasted almonds, and cornstarch. Stir until the apples are well coated.

Assembling and Baking the Pie

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Roll Out the Dough

    On a floured surface, roll out one disc of the chilled pastry dough into circles that fit your individual pie pans.
