Method
Making the Pastry Dough
- 1
Prepare the Dough
In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- 2
Form the Dough
Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
Preparing the Apple Filling
- 3
Core and Slice the Apples
Peel, core, and slice the Granny Smith apples into thin wedges.
- 4
Mix the Filling
In a large bowl, combine the sliced apples, brown sugar, ground cinnamon, ground nutmeg, lemon juice, toasted almonds, and cornstarch. Stir until the apples are well coated.
Assembling and Baking the Pie
- 5
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 6
Roll Out the Dough
On a floured surface, roll out one disc of the chilled pastry dough into circles that fit your individual pie pans.
- 7
Fill the Pies
Place the rolled dough into the pie pans and fill each with the apple filling mixture.
- 8
Top with Dough
Roll out the second disc of pastry dough and cut it into strips or shapes to create a lattice or cover for the pies. Seal the edges by crimping.
- 9
- 10
Bake the Pies
Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
Serving the Pie
- 11
Cool and Serve
Allow the pies to cool for a few minutes before serving. Top each individual pie with a scoop of Canadian maple ice cream.
