Method

Tataki-Style Steak

    Prepare the Marinade

    In a bowl, whisk together soy sauce, sesame oil, rice vinegar, grated ginger, and minced garlic.

    Marinate the Steak

    Place the beef steak in a shallow dish and pour the marinade over it. Allow it to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Sear the Steak

    Heat a skillet over high heat. Remove steak from marinade and sear for about 1-2 minutes on each side until browned but rare inside. Let rest for 5 minutes.

    Slice and Garnish

    Slice the steak thinly against the grain and sprinkle with black sesame seeds and chopped green onions.

Ponzu Sauce

    Mix the Ponzu Sauce

    In a small bowl, combine soy sauce, yuzu juice (or lemon juice), rice vinegar, mirin, and dashi stock. Stir well and set aside.

Seared Salmon Sushi

    Cook the Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to manufacturer's instructions.

    Season the Rice

    Once cooked, transfer rice to a bowl and gently fold in rice vinegar. Allow it to cool to room temperature.

    Prepare the Salmon

    Sear the sushi-grade salmon on a hot skillet for about 30 seconds on each side. Let it cool slightly before slicing.

    Assemble the Sushi

    Place a nori sheet on a bamboo mat, spread sushi rice evenly on top, leaving a small border. Add sliced salmon, cucumber, and a small amount of wasabi paste. Roll tightly and slice into bite-sized pieces.

    Serve

    Serve with pickled ginger on the side and drizzle with ponzu sauce for dipping.

Tuna & Avocado Crunch Roll

    Prepare the Tuna

    Sear the sushi-grade tuna for about 30 seconds on each side in a hot skillet. Let it cool before slicing it thinly.

    Assemble the Crunch Roll

    On a bamboo mat, place a nori sheet, evenly spread sushi rice, followed by sliced tuna and avocado. Roll tightly and then coat the outside with panko breadcrumbs.

    Fry the Roll

    Heat oil in a pan and fry the roll until the panko is golden brown. Slice the roll into pieces.

    Serve

    Serve with soy sauce for dipping.
