Honey Mustard Kale Slaw

Sandwich Assembly

Method

Prepare the Chicken

  1. 1

    Prepare the Coating

In three separate bowls, set up a breading station: one with flour mixed with salt, pepper, and paprika; one with beaten eggs; and one with breadcrumbs.

  2. 2

    Bread the Chicken

Dip each chicken breast first in the flour mixture, then in the egg, and finally in the breadcrumbs, ensuring an even coating.

  3. 3

    Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken and fry for about 5-7 minutes on each side, or until golden brown and cooked through.

  4. 4

    Drain Excess Oil

Remove the chicken from the skillet and place on paper towels to drain excess oil.

Prepare the Honey Mustard Kale Slaw

  1. 5

    Mix the Vegetables

In a large bowl, combine the chopped kale and shredded carrots.

  2. 6

    Whisk the Dressing

In a separate small bowl, whisk together honey, Dijon mustard, apple cider vinegar, olive oil, salt, and pepper until well combined.

  3. 7

    Combine Slaw

Pour the dressing over the kale and carrots, and toss until evenly coated. Let it sit for at least 10 minutes to soften the kale.

Assemble the Sandwich

  1. 8

    Prepare the Buns

Toast the burger buns if desired.

  2. 9

    Layer the Ingredients

On the bottom half of each bun, place a crispy chicken breast, followed by a generous amount of honey mustard kale slaw and a handful of dill pickle slices.

  3. 10

    Complete the Sandwich

Top with the other half of the bun and serve immediately.
