Blackened Chicken

Horseradish Aioli

Creamy Coleslaw

Method

Blackened Chicken

  1. 1

    Prepare the Spice Mix

In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, black pepper, and salt. Mix well.

  2. 2

    Season the Chicken

Pat the chicken breasts dry with paper towels. Rub the spice mix evenly over both sides of the chicken breasts.

  3. 3

    Cook the Chicken

In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until blackened and cooked through. Remove from heat and let rest.

Warm Potato Salad

  1. 4

    Cook the Potatoes

In a pot of boiling salted water, add the halved potatoes and cook until fork-tender, about 10-15 minutes. Drain and set aside.

  2. 5

    Cook the Bacon

In a skillet, cook the chopped bacon over medium heat until crispy. Remove from pan and place on paper towels to drain.

  3. 6

    Combine Salad Ingredients

In a large bowl, combine the warm potatoes, cooked bacon, sliced green onions, dijon mustard, white vinegar, chopped parsley, salt, and black pepper. Toss to combine.

Horseradish Aioli

  1. 7

    Mix the Aioli

In a medium bowl, whisk together the mayonnaise, prepared horseradish, lemon juice, minced garlic, salt, and black pepper until smooth and well combined. Adjust seasoning to taste.

Creamy Coleslaw

  1. 8

    Make the Dressing

In a large bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

  2. 9

    Combine Slaw Ingredients

Add the shredded cabbage and shredded carrots to the dressing. Toss until all vegetables are well coated.
