Cauliflower Tacos

Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Cut the cauliflower into florets. In a large bowl, toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, and salt until evenly coated.

Roast the Cauliflower
Spread the cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden and tender, flipping halfway through.

Warm the Tortillas
In the last 5 minutes of roasting, warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side until pliable.
Chipotle Mayo

Make the Chipotle Mayo
In a small bowl, combine mayonnaise, chipotle peppers, and lime juice. Mix well until smooth. Adjust seasoning if needed.
Cilantro Chimichurri

Prepare the Chimichurri
In a food processor, combine cilantro, garlic cloves, red wine vinegar, olive oil, salt, and black pepper. Blend until well combined and slightly chunky.
Corn Guacamole

Make the Corn Guacamole
In a bowl, mash the avocados. Stir in corn, diced red onion, diced tomato, lime juice, and salt to taste. Mix until combined but still chunky.
