Clean the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

Season the Wings
In a large bowl, combine the chicken wings, salt, black pepper, garlic powder, and baking powder. Toss until the wings are evenly coated.
Cooking

Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 375°F (190°C).

Fry the Wings
Carefully add the seasoned chicken wings to the hot oil in small batches. Fry for 10-12 minutes or until golden brown and crispy, turning occasionally.

Drain and Cool
Once cooked, use a slotted spoon to remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.

In a large bowl, add the crispy wings and pour your choice of sauce over them. Toss to coat evenly.
