Preparing the Mini Steaks

Seasoning the Steaks
In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub this mixture evenly over the mini beef steaks.

Cooking the Steaks
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the mini steaks and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest.

Simmering the Broth
Pour in the beef broth, soy sauce, Worcestershire sauce, and fresh thyme. Bring the mixture to a simmer and let cook for about 10 minutes to allow the flavors to meld. Adjust seasoning with salt and pepper if needed.
Assembling the Dips

Preparing the Rolls
While the au jus simmers, slice the French rolls in half. Spread butter on the inside of each roll and toast them in the oven until golden brown.

Assembling the Sandwiches
Slice the rested mini steaks thinly and place them inside the toasted rolls. Top each with a slice of provolone cheese, allowing it to melt slightly from the heat of the meat.

Serve the mini steak sandwiches warm, alongside small bowls of au jus for dipping.
