    Clean and prepare mussels

    Rinse mussels under cold running water. Discard any mussels with cracked shells or those that do not close when tapped. Use a small knife to remove beards (the fibrous tuft) by pulling toward the hinge. Place cleaned mussels in a bowl in the refrigerator until ready to cook.

    Prep aromatics and other ingredients

    Finely chop the shallot, mince the garlic, dice the celery, halve the cherry tomatoes (if using), chop parsley, zest and juice the lemon, and measure wine, cream, and passata so they are ready to add quickly during cooking.

    Heat pan

    In a large wide pot or deep skillet with a tight-fitting lid, warm the butter and olive oil over medium heat until butter is melted and foamy but not browned.

    Sauté aromatics

    Add the chopped shallot and diced celery to the pan and cook, stirring occasionally, until softened and translucent, about 3–4 minutes. Add the minced garlic and red pepper flakes and cook for 30–45 seconds until fragrant, taking care not to burn the garlic.

    Build the base — choose red or white

    For white/cream style: pour in the white wine and bring to a simmer, scraping any browned bits from the pan. Let the wine reduce by about half (about 2–3 minutes), then stir in the heavy cream and fresh thyme. For red/tomato style: add the cherry tomatoes and tomato passata (or crushed tomatoes), then pour in the wine (or stock), bring to a simmer, and let the sauce reduce for 2–3 minutes so flavors combine.

    Add mussels and steam

    Increase heat to medium-high. Add the cleaned mussels to the pot, sprinkle with salt and pepper, cover with the lid, and steam for 4–6 minutes, shaking the pot once or twice, until the mussels have opened. Discard any mussels that remain closed after 6 minutes.

    Finish sauce

    Remove the pot from heat. Stir in lemon zest, lemon juice, and chopped parsley. If making the white version and the sauce seems thin, return to low heat for 30–60 seconds to thicken slightly; if making the red version, taste and adjust seasoning. Add an extra tablespoon of butter, if desired, and swirl to enrich the sauce.

    Serve

    Transfer mussels and sauce to warmed bowls or serve straight from the pot. Sprinkle with additional parsley, a crack of black pepper, and serve with plenty of crusty bread to soak up the sauce. Estimated serving: 2–3 people.
