Prepare lobster
If using pre-cooked lobster, pat the lobster meat dry with paper towels and cut into 1-inch bite-sized pieces. If starting with raw lobster, steam or poach until just cooked through (internal temperature ~135°F / 57°C), cool slightly, then remove meat and cut into bite-sized pieces.

Preheat broiler
Position an oven rack about 6 inches (15 cm) from the broiler element and preheat the broiler. Alternatively, set a very hot oven to 500°F (260°C). Line a rimmed baking sheet with foil and lightly oil or spray to prevent sticking.

Make butter-sherry sauce
In a small saucepan over medium-low heat, melt the unsalted butter. Add the minced garlic and minced shallot and cook gently 1 to 1 1/2 minutes until fragrant but not browned. Stir in the dry sherry and simmer 30–45 seconds to reduce slightly. Remove from heat, then stir in the lemon juice, smoked paprika, half of the chopped parsley, sea salt, and black pepper.

Combine lobster and sauce
Place the lobster pieces in a mixing bowl. Pour the warm butter–sherry mixture over the lobster and toss gently to coat every piece. Taste one piece and adjust seasoning with a pinch more salt, pepper, or a few drops of lemon juice as desired.

Arrange for broiling
Arrange the coated lobster bites in a single layer on the prepared baking sheet or in individual small ovenproof dishes (ramekins). Drizzle the optional teaspoon of olive oil over the pieces if using; this helps with browning. Spoon any remaining butter mixture evenly over the bites.

Broil
Broil for 2–4 minutes, watching closely: the lobster should be heated through, the butter should bubble, and the edges may develop a light golden color. Avoid overcooking—lobster becomes tough if broiled too long. If you prefer a slightly gratinéed top, run the broiler another 30–60 seconds, still watching carefully.

Finish and garnish
Remove the baking sheet from the oven. Sprinkle the remaining chopped parsley and the optional microgreens over the lobster bites. Serve immediately with lemon wedges on the side for squeezing.

Serve these lobster bites hot as an appetizer or as a small plated dinner course alongside a light salad or crusty bread to mop up the butter–sherry sauce.
