Foie Gras Patties

    Prepare foie gras

    Slice the foie gras into two 100g medallions. Season both sides with salt and black pepper.

    Sear foie gras

    Heat a non-stick skillet over medium-high heat. Sear foie gras slices for about 30 seconds to 1 minute on each side until golden brown and caramelized. Remove and let rest on paper towels.

Crispy Chicken Patties (bun substitute)

    Marinate chicken

    Pound chicken breasts to even thickness (about ½ inch). Place in a bowl and cover with buttermilk. Let marinate for at least 30 minutes, or up to overnight in the fridge.

    Prepare coating

    In a shallow dish, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.

    Coat chicken

    Remove chicken from buttermilk and dredge in the seasoned flour mixture, pressing firmly to adhere coating. Shake off excess.

    Fry chicken

    Heat vegetable oil in a heavy skillet to 350°F (175°C). Fry chicken breasts for 4-5 minutes per side or until golden brown and internal temperature reaches 165°F (74°C). Drain on paper towels.

Sauce

    In a small bowl, whisk together mayonnaise, Dijon mustard, honey, lemon juice, salt, and cayenne pepper until smooth. Set aside.

Assembly

    Assemble sandwich

    Place one crispy chicken breast on a plate. Top with a foie gras patty, a few pickled red onions, a handful of arugula, and a generous spoonful of sauce. Top with the second crispy chicken breast to form a sandwich.
