Prepare the vanilla

If using a vanilla bean, split it lengthwise and scrape out the seeds. Set both seeds and pod aside. If using extract, wait to add it later.

Heat the milk

In a medium heavy-bottomed saucepan, pour in the milk and bring it to a gentle simmer over medium heat. Stir occasionally to prevent scorching.

Add rice and vanilla

Once the milk is simmering, add the rice, salt, and vanilla seeds and pod (or skip the extract for now). Stir well to combine.

Simmer the pudding

Reduce the heat to low and let the mixture simmer gently for about 30–35 minutes, stirring frequently to prevent sticking. The rice will absorb the milk and become tender and creamy.

Add sugar and finish

Once the rice is fully cooked and the mixture is thick and creamy, remove the vanilla pod if used. Stir in the sugar and vanilla extract (if using extract instead of pod). Cook for another 5 minutes, stirring constantly.

Cool slightly

Remove the pot from heat and let the pudding cool slightly. It will thicken further as it cools.

Serve the Riz au Lait warm or chilled, topped with a sprinkle of cinnamon, a dollop of whipped cream, or a spoonful of fresh berries or fruit compote, if desired.
