    Prepare the veal chop

    Season both sides of the veal chops generously with kosher salt and freshly ground black pepper. Let them sit at room temperature for 20 minutes to promote even cooking.

    Sear the veal

    Heat olive oil in a heavy skillet (preferably cast iron) over medium-high heat until shimmering. Add the veal chops and sear for 3–4 minutes per side until golden brown.

    Baste with butter and aromatics

    Reduce heat to medium. Add the butter, thyme sprigs, and crushed garlic cloves to the pan. Once the butter is melted and foamy, tilt the pan and use a spoon to baste the veal chops with the butter for another 2–3 minutes.

    Finish cooking

    Transfer the skillet with the veal chops to a preheated oven at 375°F (190°C) and roast for 6–8 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from oven, tent with foil, and let rest for 5 minutes.

Foie Gras Jus

    Sauté shallots

    While the veal is resting, in a small saucepan, sauté the chopped shallots over medium heat with a small amount of butter until translucent, about 2–3 minutes.

    Deglaze and reduce

    Add the white wine to the pan and simmer until reduced by half, about 3–4 minutes.

    Add stock and foie gras

    Pour in the veal or beef stock and bring to a simmer. Add the diced foie gras and stir gently until melted and fully incorporated into the sauce, about 3 minutes.

    Finish the sauce

    Reduce the sauce slightly to thicken, then whisk in the cold diced butter to emulsify. Season with salt and black pepper to taste. Strain through a fine mesh sieve for a smooth finish, if desired.
