    Prepare the Vegetables

    Begin by washing and peeling the carrots. Cut them into small pieces and set aside. Clean the leeks by slicing them lengthwise and rinsing under running water to remove any dirt. Slice the leeks into thin half-moons. Chop the onion and mince the garlic.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and sliced leeks, cooking for an additional 5 minutes until softened.

    Add Carrots and Spices

    Add the chopped carrots to the pot, followed by the whole cardamom pods, salt, and black pepper. Stir well to combine the ingredients.

    Simmer the Soup

    Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the carrots are tender.

    Blend the Soup

    After simmering, remove the pot from heat. Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a countertop blender.

    Taste the soup and adjust the seasoning if necessary. Serve hot, garnished with a sprinkle of fresh parsley on top.
