Bring water to a boil
Pour 6 cups of water into a medium pot and add 1 tablespoon kosher salt. Place over high heat and bring to a rolling boil.

Cook edamame
Add 1 cup frozen edamame (in pods) to the boiling water. Return to a boil, then cook for 3 to 5 minutes until the pods are bright green and the beans inside are tender when tested. If using larger or fresh pods, cook toward the higher end of that range.

Drain and cool briefly
Drain the edamame in a colander and shake off excess water. Let sit for 30 to 60 seconds so they’re not steaming, but still warm — easier to absorb the seasoning.

Season and toss
Return the drained, warm edamame to the pot (off the heat) or a mixing bowl. Drizzle with 1 teaspoon toasted sesame oil, sprinkle 1 teaspoon freshly ground black pepper, 1 teaspoon coarse or flaky finishing salt, and 1/4 teaspoon crushed red pepper flakes if using. Toss gently to coat the pods evenly.
