    Prep salmon

    Trim any remaining skin or connective tissue from the salmon and pat dry with paper towels. Cut into roughly 1/2-inch dice so pieces are bite-sized for tacos.

    Make poke marinade

    In a medium bowl combine soy sauce, sesame oil, rice vinegar, mayonnaise, Sriracha, grated ginger, lime juice and kosher salt. Whisk until smooth and slightly emulsified.

    Season salmon

    Add the diced salmon to the marinade and gently fold to coat all pieces. Stir in thinly sliced green onion, toasted sesame seeds and optional diced red chili. Taste and adjust: add a little more soy for saltiness or a touch more Sriracha for heat.

    Chill briefly

    Cover and refrigerate the poke for 10–15 minutes while you prepare the taco components. Do not marinate for more than 30 minutes to preserve texture of raw salmon.

Taco Assembly

    Warm tortillas

    Heat a dry skillet over medium-high heat. Warm each corn tortilla 20–30 seconds per side until pliable and lightly charred in spots, or warm in a microwave wrapped in a damp towel for 20–30 seconds. Keep warm under a clean towel.

    Prepare base

    Divide shredded cabbage between the two warmed tortillas, creating a thin bed in the center of each. This gives crunch and prevents the tortilla from getting soggy.

    Add salmon poke

    Spoon half of the chilled salmon poke onto each tortilla, distributing the fish evenly so each taco gets a generous portion (about 100 g salmon total divided).

    Top and garnish

    Arrange avocado slices and pickled red onion over the poke. Sprinkle microgreens or cilantro leaves and the optional crispy fried shallots or tempura flakes and extra sesame seeds. Add a small drizzle of extra Sriracha or chile oil if you like more heat.

    Serve immediately with a lime wedge alongside for squeezing over the tacos just before eating.
