Prepare the Butter Mixture
In a mixing bowl, combine the softened unsalted butter, Boursin cheese, yellow miso paste, minced garlic, chopped thyme, salt, and black pepper. Mix until well combined and creamy.

Prepare the Chicken
Preheat your oven to 425°F (220°C). Pat the chicken halves dry with paper towels and season them with salt and black pepper. Rub the olive oil all over the chicken halves.

Apply the Butter Mixture
Using your hands or a spatula, generously spread the butter mixture under the skin and over the surface of the chicken halves.

Roast the Chicken
Place the chicken halves, skin-side up, in a roasting pan. Roast in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy.

Rest and Serve
Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve with your favorite sides.
