    Make the Virgin Sauce

    In a bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper until well combined. Set aside.

    Prepare the Fennel Salad

    In a large bowl, combine the thinly sliced fennel, arugula, kalamata olives, and red onion. Add lemon zest, salt, and black pepper to taste. Toss gently to combine.

Cooking the Arctic Char

    Cook the Fish

    Preheat a grill or skillet over medium-high heat. Season the Arctic char fillets with salt and black pepper. Place the fillets skin-side down on the grill or skillet and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork.

Serving

    Plate the Dish

    On each plate, place a portion of the fennel salad. Top with a grilled Arctic char fillet and drizzle with the virgin sauce. Serve immediately.
