Preparation

Prepare the Polenta

1. Cook the Polenta

In a pot, bring water to a boil. Add salt, then gradually whisk in the cornmeal, stirring constantly to prevent lumps. Cook for about 15 minutes until thickened. Stir in olive oil.

2. Set the Polenta

Pour the polenta into a greased baking dish and spread evenly. Allow it to cool and set for at least 30 minutes.

3. Fry the Polenta

Once set, cut the polenta into desired shapes (squares or triangles). Heat oil in a skillet over medium heat and fry the polenta pieces until golden and crispy on each side. Remove and drain on paper towels.

Prepare the Matane Shrimps

4. Sauté the Shrimps

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the matane shrimps, paprika, lemon juice, salt, and pepper. Cook for about 5-7 minutes until the shrimps are pink and cooked through.

Prepare the Cucumber

5. Grill and Season the Cucumber

Slice the cucumber into thick strips. Brush with olive oil, sprinkle with paprika and salt, then grill or sear until slightly charred.

Assemble the Dish

6. Plate the Dish

On a serving plate, place fried polenta pieces, top with sautéed matane shrimps, and arrange grilled cucumber around. Serve labneh drizzled with olive oil and fresh mint on the side.
