Roast the Hazelnuts
Preheat the oven to 180°C (350°F). Spread the hazelnuts on a baking sheet and roast for about 10-15 minutes until golden and fragrant. Allow to cool, then chop coarsely.

Prepare the Leeks
Clean the leeks thoroughly to remove any dirt. Slice them thinly and sauté in olive oil over medium heat until soft and slightly caramelized, about 8-10 minutes. Season with salt and pepper.

Make the Gremolata
Finely chop the parsley and mix it with the lemon zest. Set aside.

Segment the Citrus
Peel the citrus fruits and remove the segments by cutting along the membranes. Collect the segments and any juice that drips out.
Assembly

Plate the Dish
On a serving plate, place the sautéed leeks as a base. Tear the burrata into pieces and place it on top of the leeks. Arrange the citrus segments around the burrata and leeks. Sprinkle the chopped hazelnuts and gremolata over the top. Drizzle with olive oil and season with salt and pepper to taste.
