Method

Beef Preparation

    Season the Beef

    Season the beef tenderloin with salt and black pepper. Sear in sesame oil over high heat for about 1-2 minutes on each side until browned. Remove from heat and let cool.

    Chill the Beef

    Wrap the beef in plastic wrap and refrigerate for at least 1 hour to firm up.

Marinated Shiitake

    Prepare the Marinade

    In a bowl, combine soy sauce, rice vinegar, mirin, and minced garlic. Mix well.

    Marinate the Mushrooms

    Add shiitake mushrooms to the marinade and let them soak for at least 30 minutes.

Mushroom-Nori Emulsion

    Blend the Emulsion

    In a blender, combine dried nori sheets, mushroom broth, and olive oil. Blend until smooth and set aside.

Garlic Chips

    Fry the Garlic

    Heat vegetable oil in a pan over medium heat. Add sliced garlic and fry until golden brown. Remove and drain on paper towels.

Honey-Soy Glaze

    Prepare the Glaze

    In a small saucepan, combine honey and soy sauce. Heat over medium-low until slightly thickened.

Assembly

    Slice the Beef

    Remove the beef from the fridge, unwrap, and slice thinly against the grain.

    Plate the Dish

    On a serving platter, arrange the beef slices, drizzle with honey-soy glaze, and top with marinated shiitake mushrooms, garlic chips, and mushroom-nori emulsion.
