    Make the rub

    In a small bowl combine paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, and kosher salt. Whisk thoroughly so the salt and spices are evenly distributed.

Pork Chops & Finish

    Prepare chops

    Pat the pork chops dry on both sides with paper towels. Trim any thick fat if desired but leave a thin rim for flavor. Lightly brush both sides of each chop with olive oil (about 1/2 tbs per side) to help the rub adhere.

    Season chops

    Generously sprinkle the Cajun dry rub over both sides of each chop, pressing gently with your hands so the rub forms an even coating. Make sure edges are seasoned. If using extra cayenne, mix it into the rub or sprinkle on now.

    Let the seasoned chops sit at room temperature for 20–30 minutes (covered loosely) so the internal temperature evens out and the rub adheres well. If prepping ahead, wrap and refrigerate up to overnight; bring to room temperature 30 minutes before grilling.

    Preheat grill

    Preheat a gas or charcoal grill to medium-high, aiming for about 400–450°F (200–230°C). If using charcoal, set up two zones (direct heat and a cooler indirect zone). Oil the grill grates lightly to prevent sticking.

    Sear the chops

    Place the chops over direct heat. Sear for 3–4 minutes without moving to develop a good crust. Flip and sear the other side for 3–4 minutes. If flare-ups occur, move chops briefly to the cooler zone until flames subside.

    Finish to temperature

    After searing, move chops to the cooler zone (indirect heat) and continue grilling until the internal temperature reaches 140–145°F (60–63°C) for slightly pink and juicy, or 150°F (66°C) if you prefer well done. This typically takes an additional 4–8 minutes depending on thickness. Use an instant-read thermometer inserted into the thickest part without touching bone.

    Butter-lemon finish

    During the last 1–2 minutes of grilling, place 1/2 tbs unsalted butter on each chop so it melts and mingles with the rub. Remove chops from grill when they reach target temperature and tent loosely with foil for 5–7 minutes to rest. During resting, combine remaining butter, lemon juice, chopped parsley, and optional honey in a small bowl and spoon over the chops just before serving.

    Plate the pork chops and spoon the butter-lemon-herb mixture over each chop. Garnish with additional chopped parsley and an optional lemon wedge. Serve immediately.
