Your choice of a smoked or jalapeño boudin sausage link served with a generous portion of Red Beans & Rice
In a large pot, heat olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until the vegetables are tender, about 5 minutes.
Stir in the minced garlic and cook for an additional minute. Then add the red beans, chicken broth, bay leaves, Cajun seasoning, salt, and black pepper. If using dried beans, ensure they are pre-soaked and cooked before adding.
Bring the mixture to a boil, then reduce heat to low and simmer uncovered for about 30 minutes, stirring occasionally. Adjust seasoning to taste.
While the beans are simmering, cook the rice according to package instructions in a separate pot.
In a skillet, grill or pan-fry the boudin sausage links over medium heat until heated through and browned, about 5-7 minutes.
Once the beans and rice are ready, serve the red beans over a generous portion of rice and top with the sliced boudin sausage.
