Preparation

1. Chop the Vegetables

Wash and chop all the vegetables into small, even pieces to ensure even cooking.

2. Prepare the Broth

In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.

Add the chopped carrots, celery, potatoes, zucchini, and tomatoes to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

4. Add the Broth and Seasonings

Pour in the vegetable broth and add salt, black pepper, oregano, thyme, and the bay leaf. Stir to combine.

5. Simmer the Soup

Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the vegetables are tender.

6. Add Spinach

In the last 5 minutes of cooking, add the spinach to the pot and stir until wilted.

7. Adjust Seasoning

Taste the soup and adjust seasoning with more salt and pepper if needed. Remove the bay leaf before serving.
