Make Tabbouleh
In a large bowl, combine 1 cup of finely chopped parsley, 1/2 cup of diced tomatoes, 1/4 cup of diced cucumber, 1/4 cup of chopped green onion, 1/4 cup of olive oil, the juice of one lemon, and salt to taste. Mix well and let it sit for 15 minutes.

Prepare Stuffed Grape Leaves
Arrange 12 stuffed grape leaves on a serving platter. You can use store-bought or homemade. Drizzle with olive oil and lemon juice.

Roasted Red Pepper Dip
Blend together 1 cup of roasted red peppers, 1/4 cup of tahini, 1 clove of garlic, 2 tablespoons of olive oil, and salt to taste in a food processor until smooth.

Prepare Vegetable Samosas
Cook 6 vegetable samosas according to the package instructions or make your own. Serve warm.

Fry Falafel
Fry or bake 12 falafel balls until golden brown and crispy. Serve with tahini sauce if desired.

Prepare Olives
Place 1 cup of mixed olives in a small bowl for serving.

Serve Pita Bread
Warm 4 pieces of pita bread in the oven or on a skillet until soft and pliable.

Assemble Platter
On a large serving platter, arrange the hummus, tabbouleh, stuffed grape leaves, roasted red pepper dip, vegetable samosas, falafel, olives, and warm pita bread. Serve with additional lemon wedges on the side.
