    Prepare the Filling

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add finely chopped onion and sauté until translucent. Add the rice and stir for a minute. Pour in 1 cup of vegetable broth and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until rice is cooked. Remove from heat and let cool. Stir in chopped parsley, dill, salt, black pepper, and lemon juice.

    Prepare the Grape Leaves

    If using jarred grape leaves, rinse them under cold water to remove excess brine. If using fresh leaves, blanch them in boiling water for about 2-3 minutes until softened.

    Stuff the Grape Leaves

    Lay a grape leaf on a flat surface, vein side up. Place about 1 tablespoon of the rice filling at the base of the leaf. Fold the sides over the filling and roll tightly from the base to the tip. Repeat with remaining leaves and filling.

    Cook the Stuffed Leaves

    In a large pot, arrange the stuffed grape leaves seam side down. Drizzle with the remaining olive oil and add 1 cup of vegetable broth. Place a plate on top to keep them submerged. Cover the pot and simmer on low heat for about 45 minutes. Add more broth if necessary during cooking.

    Serve

    Once cooked, remove from heat and let rest for a few minutes. Serve warm with lemon wedges.
