Falafel Preparation

    Soak the Chickpeas

    Place the dried chickpeas in a bowl and cover them with water. Let them soak overnight or for at least 8 hours.

    Make the Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

    Form the Falafel Balls

    Transfer the mixture to a bowl and add flour. Mix well. Using your hands, form small balls or patties (about 1.5 inches in diameter).

    Heat the Oil

    In a large frying pan or pot, heat vegetable oil over medium heat until hot (about 350°F or 175°C).

    Fry the Falafel

    Carefully place the falafel balls in the hot oil, working in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

    Serve

    Serve the falafel warm with tahini sauce for dipping.
