Marinate the Chicken
In a large bowl, mix olive oil, minced garlic, lemon juice, paprika, cumin, salt, and black pepper. Add the chicken breast cut into cubes and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Skewers
Soak wooden skewers in water for 30 minutes to prevent burning. If using metal skewers, skip this step.

Assemble the Kabobs
Thread marinated chicken cubes, bell peppers, and onion chunks onto the skewers, alternating between chicken and vegetables.

Cook the Rice
In a saucepan, bring 4 cups of water to a boil. Add 2 cups of rice, reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and water is absorbed.

Serve
Serve the grilled chicken kabobs over a bed of rice. Enjoy your meal!
