Snails

Method

Preparation of Snails

  1. 1

    Soak the Snails

In a large pot, bring the water to a boil and add the salt. Once the salt has dissolved, add the escargots. Allow them to simmer for 10 minutes to cleanse them.

  2. 2

    Drain and Rinse

After simmering, drain the snails in a colander and rinse them under cold water to remove any remaining impurities.

Making Garlic Butter

  1. 3

    Prepare the Garlic Butter

In a mixing bowl, combine the softened unsalted butter, minced garlic, chopped parsley, thyme leaves, lemon juice, and black pepper. Mix until well combined.

Baking the Snails

  1. 4

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 5

    Stuff the Snails

Using a small spoon, fill each snail shell with the garlic butter mixture. If you do not have shells, you can use small baking dishes. Place the snails in their shells or dishes.

  3. 6

    Bake

Place the filled shells on a baking tray and bake in the preheated oven for about 12-15 minutes, until the butter is bubbling and slightly browned.

  4. 7

    Garnish and Serve

Remove the snails from the oven, garnish with extra chopped parsley, and serve immediately while hot.
