Prepare the Rice

Cook the Rice
In a medium saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes (or according to package instructions) until rice is tender and water is absorbed.

Mix the Sauce
In a small bowl, whisk together 4 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 teaspoon of cornstarch, and 2 tablespoons of water until smooth. Set aside.
Stir Fry the Vegetables

Heat the Pan
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Once hot, add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

Add the Sauce
Pour the prepared sauce over the stir-fried vegetables. Toss everything together and cook for an additional 2-3 minutes, until the sauce thickens and coats the vegetables.
