Method

Preparing the Short Rib

    Sear the Short Ribs

    Preheat your oven to 300°F (150°C). In a large oven-safe pot, heat olive oil over medium-high heat. Season the short ribs with salt and pepper, then sear them on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, add diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Add Liquid and Seasoning

    Return the short ribs to the pot. Pour in the beef broth and add smoked paprika and cumin. Bring to a simmer.

    Slow Roast

    Cover the pot and transfer it to the preheated oven. Roast for 3-4 hours or until the meat is tender and easily falls off the bone.

Tacos Assembly

    Shred the Meat

    Once the short ribs are done, remove them from the pot and shred the meat using two forks. Discard any bones.

    Warm the Tortillas

    Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

    Assemble the Tacos

    On each tortilla, layer shredded short rib, a sprinkle of Monterey Jack cheese, a spoonful of smoked chili tomato jam, a drizzle of lime crema, and a generous handful of shredded red cabbage.

Gouda Mac & Cheese

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and bring to a simmer, stirring continuously until thickened.

    Add Cheese

    Remove the pot from heat and stir in shredded gouda cheese until melted. Season with salt and pepper.

    Combine Pasta and Sauce

    Add the cooked macaroni to the cheese sauce, stirring until well combined.
