Prepare the Filling
In a large bowl, combine ground pork, minced ginger, minced garlic, chopped green onions, soy sauce, sesame oil, salt, and black pepper. Mix well until fully incorporated.
Corn Topping Preparation

Char the Corn
Heat vegetable oil in a pan over medium-high heat. Add corn kernels and salt. Sauté for about 5-7 minutes until the corn is slightly charred. Remove from heat and set aside.
Lime Aioli Preparation

Make the Lime Aioli
In a small bowl, combine mayonnaise, lime juice, minced garlic, and salt. Whisk until smooth and set aside.
Pot Sticker Assembly

Assemble the Pot Stickers
Roll out the rested dough into thin circles. Place about 1 tablespoon of the filling in the center of each circle. Fold the dough over to create a half-moon shape. Pinch the edges to seal tightly.

Cook the Pot Stickers
In a large skillet, heat a thin layer of oil over medium heat. Add the pot stickers in batches and cook until the bottoms are golden brown, about 3-4 minutes. Add a splash of water to the pan, cover, and steam for about 5 minutes until cooked through.

Plate the pot stickers and top with the charred corn, crumbled cotija cheese, and a sprinkle of Tajín. Serve with tortilla chips and lime aioli on the side.
