Dough Preparation

Activate the Yeast
In a small bowl, combine warm water (about 110°F) with sugar and yeast. Let it sit for 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Stir until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let it Rise
Place the kneaded dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Knots
Preheat the oven to 400°F (200°C). Punch down the risen dough and turn it out onto a floured surface. Divide the dough into 12 equal pieces, roll each piece into a rope about 10 inches long, and tie into a knot.

Prepare for Baking
Place the knots on a baking sheet lined with parchment paper. Cover with a cloth and let them rise for another 20-30 minutes.

Bake in the preheated oven for 15-20 minutes, or until golden brown.
