Method

Preparation of Shrimp

  1. 1

    Prepare the Shrimp

Rinse the peeled and deveined shrimp under cold water and pat them dry with paper towels.

Breading Station

  1. 2

    Set Up Breading Station

In three shallow dishes, place all-purpose flour mixed with salt and black pepper in the first dish. In the second dish, beat the eggs. In the third dish, combine shredded coconut and panko breadcrumbs.

Bread the Shrimp

  1. 3

    Coat the Shrimp

Take each shrimp and dredge it in the flour mixture, shaking off any excess. Then dip it into the beaten eggs, allowing any excess egg to drip off, before finally coating it in the coconut and panko mixture, pressing gently to adhere.

Cooking the Shrimp

  1. 4

    Heat the Oil

In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Shrimp

Carefully place the breaded shrimp in the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and cooked through.

  3. 6

    Drain Excess Oil

Use a slotted spoon to remove the shrimp from the oil and place them on a plate lined with paper towels to drain any excess oil.

Serving

  1. 7

    Serve the Coconut Shrimp

Serve the coconut shrimp warm with a side of sweet chili sauce or your favorite dipping sauce.
