Preparing the Shrimp

Marinate the Shrimp
In a medium bowl, combine the peeled and deveined shrimp with lime juice and Cholula hot sauce. Make sure the shrimp are fully submerged in the marinade. Cover and refrigerate for about 30 minutes to allow the flavors to meld and the shrimp to slightly cook in the acidity of the lime juice.

Cook the Shrimp
After marinating, transfer the shrimp to a pot of boiling water. Cook for about 2-3 minutes until the shrimp turn pink and opaque. Drain and set aside to cool.
Mixing the Salad

Combine Vegetables
In a large bowl, combine the diced cucumber, finely chopped red onion, diced tomatoes, and chopped cilantro. Mix gently to combine.

Add Shrimp
Once the shrimp have cooled, add them to the vegetable mixture. Toss everything together gently to ensure the shrimp and vegetables are well mixed.
Serving

Plate and Serve
Serve the cocktail shrimp mixture in a large serving bowl with tortilla chips on the side. Enjoy as a refreshing appetizer or snack!
