Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it’s hot enough to create a molten center.
- 2
Prepare Ramekins
Grease four ramekins with butter and dust with flour to prevent sticking. Place them on a baking sheet for easier handling.
Making the Cake Batter
- 3
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in short intervals, stirring until smooth.
- 4
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until the mixture is light and frothy.
- 5
Combine Mixtures
Carefully combine the melted chocolate mixture with the egg mixture. Stir gently until fully incorporated.
- 6
Add Dry Ingredients
Sift in the all-purpose flour and add a pinch of salt. Fold the mixture gently until just combined.
- 7
Add Vanilla Extract
Stir in the vanilla extract until evenly distributed.
Baking the Cake
- 8
Fill Ramekins
Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.
- 9
Bake
Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.
- 10
Cool Briefly
Remove the baking sheet from the oven and let the cakes cool for about 1 minute.
Serving
- 11
Unmold the Cakes
Carefully run a knife around the edges of each ramekin and invert them onto individual plates.
- 12
